Raya dishes: How to make Kuah Kacang

Kuah kacang or peanut sauce is a popular item on the menu during Raya. It’s best served with some nasi impit! Here’s how you can make it.

Ingredients:

400g of ground peanuts

1 cup chilli paste

80g palm sugar

1/2 cup tamarind water

Salt to taste

Ingredients to blend:

4 shallots

3 cloves garlic

2-inch ginger

1 lemongrass stalks

2-inch galangal (optional)

Instructions:

1.Fry the peanuts until golden brown. Lift and cool then grind coarsely.

2. Heat about 3 tablespoons of oil and add the finely blended ingredients along with the chili paste. Fry until the oil separates.

3. Add the peanuts and water. Bring to a boil.

4. Add palm sugar, tamarind water and salt to taste. Continue to cook until the gravy thickens.
