Chicken Rendang is another staple dish during Raya. Try this recipe and pair it with some lemang or even ketupat palas - whichever you prefer!
Ingredients:
1/2 chicken
3-4 turmeric leaf
4 lime leaf
2 lemongrass sticks
2 cups coconut milk
2 cup chili paste
2 tbsp Kerisik Kelapa
1 cube chicken stock
Brown sugar to taste
Salt to taste
The paste (blend):
5 garlic
5 shallot
3-inch ginger
2-inch fresh turmeric
4 red chili
3-inch galanga
Instructions:
2.After 3 minutes, add the chicken, turmeric leaf, and lime leaf.
3.After 6 minutes, add the paste, chicken stock and lemongrass, stir the pot for 4 minutes and add coconut milk and stir again.
4. Add the kerisik Kelapa, sugar and salt into the pot.
5.Bring to a simmer and cook for 20 minutes until the sauce thickens and the oil separates. Use low heat, stir every now and then. Ready to serve!
