They say that Red Velvet Cookies are a combination of the red velvet cake and chocolate chip cookies! This recipe is infused with white chocolate chips and almond flakes, perfect to be enjoyed during the festive season.
Ingredients
100g salted butter
100g castor sugar
1 teaspoon red colouring
1 egg yolk 180g wheat flour
1 tablespoon corn flour
2 tablespoons rice flour
20g cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
100g white chocolate optional
60g almond flakes
1 teaspoon vanilla essence
Instruction:
1. In a bowl, add butter and castor sugar whisk it. Add the egg yolk, continue whisking it for a few minutes before adding the red colouring. Whisk until desired colour is achieved.
2. Then, add flour, cocoa powder, baking soda and baking powder. Mix it evenly.
3. Add almond flakes, white chocolate chips and mix again.
4. Preheat the oven to 160 Celsius, take small scoops of the mixture and place it on the parchment paper on the baking tray.
5. Bake for 15 to 20 minutes. Let it chill for 10 minutes once it comes out of the over.
6. Ready to devour!
