With about two more weeks before Ramadan comes to an end, preparations for Raya is well underway.
Food is undeniably one of the things we look forward to indulging come the festive season, and this of course includes Raya cookies!
While shopping for Raya cookies is fun but making them from scratch is even better. From chocolate chip cookies, to pineapple tarts and more, the choices are endless when it comes to Raya cookies.
This time, I am giving it a shot to try out super easy recipe to make Cranberry Cornflake Cookies.
Chef Abu Dzar Abu Rahman said that this is a recipe that will "confirm berjaya!" so even with no baking experience, I should be able to whip up a good batch!
Here's the recipe for the Cranberry Cornflake Cookies. Ingredients are minimal and easy to find in supermarkets or baking supply stores.
Ingredients:
150 grams salted butter
180 grams castor sugar
1 teaspoon vanilla extract
2 egg yolks
110 grams cornflakes
240 grams flour
1 teaspoon baking powder
1 teaspoon lemon zest
100 grams cranberries
50 grams white chocolate chips
The first mission before entering the kitchen, which is securing the ingredients, is accomplished once you manage to prepare all the ingredients listed.
Now what? Get yourselves ready and equip yourself with a cute apron and the baking tools needed such as the spatulas, stand mixer and parchment papers, among others.
The first step is to beat the salted butter and castor sugar until light and fluffy in a bowl. It is best to only use white sugar for this recipe.
Next, add vanilla essence, lemon zest and egg yolks one at a time while beating on low speed and set them aside. Be careful as you put in the egg yolks because it is easy for them to stick together and make it harder for you to separate them.
In another bowl, put in flour and baking powder and mix them well. Baking powder is a crucial ingredient for the cookies because it plays a big part in making sure the texture of the cookies becomes crunchy.
Moving on, add the flour mixture into the batter and mix it well.
Then, add cranberries, white chocolate chips and cornflakes into the batter. Watching all these ingredients being mixed together in the mixer is satisfying as I can see the pop of colors from the cranberries blending with the batter.
Now that the batter has been perfected, it is time for you to beat the cookies into its shape. Scoop out the batter, make a round shape as big as a thumb and place them on a baking pan lined with parchment paper.
Do not forget to wear your gloves while working on this step! This is a fun experience for me since shaping the batter with your hands made the baking experience feel more real.
After that, bake them in a preheated oven at 180 degrees Celsius for about 15 to 20 minutes or until the cookies turn golden brown.
It is done and you can enjoy the crispy and delicious cookies with your family and friends during the festive occasion.
That was a piece of cake, I mean cookie, right? Chef Abu was right, this surely was a "confirm berjaya" recipe!
